Craig and I went out for Indian cuisine the night of his birthday. After that…we were on a mission! To create an authentic mug of Indian Masala Chai…and we did it! Okay, so this is our version–the flavor profile we were after.
I simmered each ingredient separately, then measured out amounts of each syrup. This is at least close to perfect!
- 8 c. water
- 4 cinnamon sticks
- 8 T. cardamom pods
- 1 t. black pepper
- 8 " ginger root, peeled and sliced
- 2 c. milk
- 1/4 c. cream
- black tea
- stevia and honey to taste
- Place everything into slow cooker. Cover with lid. Cook on low for 8 hours. Strain. Put liquid back into slow cooker. Place tea bags or loose leaf tea into liquid. Steep until it comes to the strength you like. Add milk and cream, and sweeteners. Heat. Enjoy!
