Ingredients
  1. 8 c. oats
  2. 3 c. shredded coconut
  3. 1-1/3 c. ground flax seed
  4. 2 c. sliced almonds
  5. 2 c. sunflower seeds
  6. 3 T. cinnamon
  7. 2 sticks butter
  8. 1 T. salt
  9. 1 c. cashew butter
  10. 1 t. vanilla powder
  11. 1 t. Bolivian stevia
  12. 1/3 c. honey
Instructions
  1. Grind flax in a coffee grinder.
  2. Place almonds and sunflower seeds in a food processor and process until ground to the degree you enjoy.
  3. Mix dry ingredients, except for stevia.
  4. Melt wet ingredients and stevia together in a saucepan.
  5. Pour wet into dry ingredients and mix. I use my hands.
  6. Place into pans.
  7. Bake at whatever temperature you like. If you bake it at 250 degrees, you won't need to stir it often, and it will take hours. If you bake it at 350 degrees, you need to stir it every 15 minutes or so, and bake for an hour or less...or until slightly browned.
Notes
  1. I grind my own flax seed in a coffee grinder. This is because ground flax seed goes rancid very quickly. So the ground flax in stores has got to be rancid! Also, for this reason, I keep this granola in a gallon jar in the refrigerator.
  2. I use vanilla powder--ground vanilla beans. This has a much more potent flavor than vanilla extract. You may want to add more with extract.
