Meatball ingredients
  1. 4 lbs. ground beef (room temperature)
  2. 4 t. salt
  3. 2 t. pepper
  4. 2 t. oregano
  5. 2 t. garlic powder
  6. 2 t. onion powder
  7. 4 eggs
  8. 1 c. oat flour
Sauce ingredients
  1. 48 oz. of tomato paste
  2. 1/2 c. red wine vinegar
  3. 1 T. balsamic vinegar
  4. 1/2 c. real maple syrup
  5. 2 T. mustard
  6. 1 t. garlic powder
  7. 1 t. onion powder
  8. 2-3 T. smoked paprika
  9. salt
  10. pepper
  11. cayanne
  12. 1/2 t. stevia (or less)
  13. water
Instructions
  1. Mix meatball ingredients and form into small balls.
  2. Mix and simmer sauce ingredients for 30 minutes, stirring occasionally.
  3. Heat cast iron pan until very hot. I use refined coconut oil to glaze the pan a bit.
  4. Sear each meatball on at least two sides, until a lovely, caramelized crust forms.
  5. (If you skip this step, you will be vastly disappointed!)
  6. Pop the meatballs into a crock pot, and cover with sauce.
  7. Cook on high for 45 to 60 minutes. Do not overcook!
