Ingredients
  1. 3 c. eggs
  2. 3 c. oats (large flake)
  3. 3 c. cottage cheese
  4. 1 c. butter
  5. 1 tsp. stevia
  6. 1 tsp. vanilla
  7. 1/2 tsp. salt
  8. 6 tsp. baking powder
Instructions
  1. Place all ingredients into blender. Blend very well.
  2. I love to thaw raspberries and drop them onto the pancakes after I pour them onto the pan.
Notes
  1. I make this ahead, and fry a few pancakes up for us each morning. When I do that, I only add a teaspoon or so of baking powder to the amount I am frying that day. Otherwise, the baking powder dies in the fridge and you just get a bitter taste if you add more.
  2. A cool benefit to making it ahead is that the oats are soaked and much healthier for you!
