Ingredients
  1. 2 c. rolled oats
  2. 2 c. raw milk (or coconut or almond)
  3. 1/2 c. coconut oil
  4. 1/2 c. raw sugar
  5. 2 t. vanilla
  6. 4 T maple syrup
  7. 1/2 t. stevia
  8. 1-1/2 c. almond flour
  9. 1/2 c. coconut flour
  10. 3 t. baking powder
  11. 1 t. baking soda
  12. 2 t. cinnamon
  13. 1/2 t. xanthan gum
  14. 4 eggs
  15. 1 apple, peeled and chopped fine
  16. 1 c. frozen blueberries
Instructions
  1. Preheat oven to 350 degrees.
  2. Soak the oats in the milk and set aside.
  3. Combine coconut oil, sugar, vanilla, maple syrup, and stevia. Stir well.
  4. In a different bowl, stir together the flour, baking soda, baking powder, cinnamon, and xanthan gum.
  5. Add the soaked oats and milk to the coconut oil mixture and stir.
  6. Add the dry ingredients a bit at a time, and stir.
  7. Add the beaten eggs and stir batter well.
  8. Sprinkle in apples and blueberries, then fold them carefully to keep from smashing the blueberries.
  9. Spoon batter into muffin tins.
  10. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
Notes
  1. You can use 2 t. chia seed, or 4 T. ground flax seed in place of the xanthan gum.
