Ingredients
  1. 2 large zucchini
  2. 2 eggs
  3. 1 c. parmesan cheese (green can kind)
  4. 1 c. almond flour
  5. 1/4 tsp. salt
  6. 1/4 tsp. pepper
Instructions
  1. Cut zucchini into sticks. I made mine about 3 inches long.
  2. Whisk eggs in a small bowl.
  3. In another bowl, combine the remaining ingredients.
  4. Dip each stick into the egg, then roll it in the flour mixture.
  5. Place on a large pan.
  6. Bake for 20 minutes at 400 degrees, or until crispy and golden.
